Ingredients
1medium overripe bananafor keto option: use 2 teaspoons banana extract
3eggs
2cupsalmond flour200 grams, regular coarse grind
¼cupolive oil
1teaspoonbaking soda
1teaspoonpure powdered stevia
½cupwalnutscrushed (optional)
1tablespoonoilfor greasing the loaf pan
Instructions
Preheat oven to 350 degrees Fahrenheit or 177 degrees Celcius.
Mashed the banana in a plate or a small bowl. In another bowl, beat the eggs. Add the mashed banana to the eggs. Also, add olive oil. Mix.
In a separate bowl mix together almond flour, baking soda, and stevia. Mix well.
Combine the two mixtures together until well blended. Toss in the walnuts if using.
Spray/grease the loaf pan with oil and pour the batter. You can use parchment paper if you don't like greasing your pan. If desired, put some pieces of walnuts on top for decoration.
Bake for 40-45 minutes in the oven. Use a tester or a toothpick, if it comes out clean then it's baked well. If making muffins, bake for 15-20 minutes.

***for keto option: use 2 teaspoons banana extract (aff link). Any brand will do. Bake for 30-35 minutes minimum.***Cooking time depends on the number of bananas you used, so if you put only 1 banana, bake for 40-45 minutes minimum.
