    Apple Pie With Vanilla Ice Cream on Top

    Finally, finally! I was able to have time and make this iconic pie. There are a lot of pie flavors but apple pie is my ultimate favorite. This apple pie recipe is topped with vanilla ice cream (optional).

    There are plenty of pie recipes but the recipe from Taste of Home works best for me. I, of course, changed some of the ingredients.

    As an alternative, I used pure stevia because I am not a fan of white sugar. For me, juice from freshly pounded ginger tastes better with this recipe. If no ginger powder in your pantry, you can try this tweak.

    Ingredients

    • ½ cup sugar
    • ½ cup packed brown sugar
    • 3 tablespoons all-purpose flour
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground ginger I used juice from freshly pounded ginger thumb size
    • ¼ teaspoon ground nutmeg
    • 6 to 7 cups thinly sliced peeled tart apples
    • 1 tablespoon lemon juice
    • Pastry for double-crust pie 9 inches
    • 1 tablespoon butter
    • 1 large egg white
    • additional sugar I used stevia
    • 1 scoop vanilla ice cream optional

    How to Make

    • In a bowl, combine and mix the sugars, flour & spices. Then set aside. Get another bowl for the apples. Toss them with lemon juice. After that, add the sugar mixture. Do more tossing to coat the apples.
    • Beat egg white until foamy and brush over pastry. Sprinkle with sugar. Cover the edges loosely with foil.
    • Preheat your oven and bake at 375° for 25 minutes. Remove foil and bake 20-25 minutes longer or until the crust is a bit golden brown and the filling has bubbles. Let it cool on a wire rack.
    • Add a scoop of your flavored ice cream on top. (Optional)
