This food blog does not fully feature keto recipes but from time to time I’d love to indulge my readers whenever they request low-carb recipes.
For this recipe, we are making low-carb hamburger buns - one of the easiest keto buns recipes you can make. If you’ve been following my blog for quite some time you will see that I’ve posted a recipe for Keto Bagels from before. I took the recipe from there and made some slight improvements.
You may notice that they have quite similar ingredients. But for this bun recipe, I added extra eggs to make them softer and less dense.
Substitute for Hamburger Buns in Keto Diet
There are healthy substitutes for regular hamburger buns like lettuce, eggplants, and portobello mushrooms to name a few but sometimes they just don’t satisfy at all. You always crave the taste and texture that a regular bun gives.
This is one of the greatest hurdles when you are on a keto diet. Letting go of the usual regular bread is just so tough.
But fret no more because there is an easy quick fix for these cravings. With only 5 ingredients and the power of your oven, you can enjoy your hamburger with this low-carb hamburger buns just the same. And it only has 2-5g net carbs compared to regular buns with 26 grams of carbs. You will never worry about going over your daily carb requirements.
Making it yourself may sound inconvenient right? If making from scratch is not your forte, you can find ready-to-eat buns in online stores and American grocery nowadays.
In my country Philippines, you won’t often find keto items in the groceries, so making them yourself is a must and the best way to go. For my low-carb hamburger buns, I usually make them in batches and store them in the freezer. It may sound like a chore but whenever I want to eat some buns, they are readily available. I just thaw and toast them. And they can last for 2 months in the freezer in an airtight or vacuum-sealed container.
The 5 Ingredients
Here are five main ingredients for low-carb hamburger buns. These ingredients are highly keto-friendly.
- Mozzarella Cheese
You will need 3 cups of shredded mozzarella cheese for this recipe. Despite the amount of cheese, you won’t taste any lingering cheese at all.
Anyone on the keto diet loves mozzarella. It’s one of the staple keto-friendly ingredients you want to always have in your pantry.
According to Underscore by factor75, the use of mozzarella cheese in keto will give you some dose of probiotics plus it has only 1 gram of carbs per ounce.
- Cream Cheese
You will always find cream cheese in every keto baking recipe because of its high-fat content. Fat has a large role in the keto diet. It’s what the keto diet is.
For this recipe, you will need 2 ounces. A block of cream cheese from the grocery store is exactly 2 ounces. You won’t worry that any amount will go to waste.
- Almond Flour
Almond flour is a favorite flour substitute and is widely used in a keto diet.
Aside from being extremely low in carbs, almond is known to have protein fiber that helps increase satiety. Sweet as Honey says almond flour has 7 times fewer carbs than regular flour.
You will need 1 and ¾ cups to make these low-carb hamburger buns.
- Baking Powder
A small amount is all you need to make your bread rise. Baking powder is low in carbs so it’s safe to use for keto baking.
- Eggs
Eggs are ideal for keto, and for this recipe, you will need 2, and an extra for the eggwash.
Some Optional Ingredients for Garnishing/Topping
- Egg wash – this is to make your buns shine. To make egg wash, beat 1 egg, and brush them onto the dough before baking. If no extra egg, use butter instead.
- Sesame Seeds – sprinkle them before baking
- Parsley – fresh or dried, sprinkle before baking
The Process of How to Make Low Carb Hamburger buns
- Preheat oven to 400 degrees F, at the same time, line the baking sheet with parchment paper
- Combine shredded mozzarella cheese and cream cheese in a microwave-safe bowl. Melt the cheese in the microwave for 20-30 seconds. Add additional seconds if needed until they are melted. Using a whisk or a spoon, combine the melted cheese until smooth. Set aside for a moment until warm.
- Add almond flour and baking soda to the cheese mixture, and fold with a spatula until the dough is well combined and thick. Best if you have a food processor.
- On a clean surface, sprinkle some almond flour. Knead the dough until smooth with lightly oiled hands.
- Make a long log and divide the dough into 6. Shape them into buns and arrange them on a parchment-lined baking sheet. See to it that you space each of the buns as they tend to expand when baked and so to avoid them sticking with each other.
- Brush with egg wash and top with sesame seeds. Sprinkle as much as you like. You may also sprinkle some dried or fresh parsley. Optional: Cut the dough on top and make a criss-cross.
- Bake for 15 minutes. Add 2-3 more minutes to brown. Remove from the oven and set aside to cool.
Important Notes
- Make sure to preheat the oven properly, it’s best to use an oven thermometer. If no oven thermometer, preheat the oven for at least 15 minutes.
- Make sure the eggs are at room temperature. Eggs at room temperature help give rise to your buns.
- Baking powder should not be expired, check the label.
- Slice the buns in half before keeping them in the fridge. Make sure the container is airtight.
