    These homemade bagels are incredibly easy to make and packed with cheesy goodness. With no yeast or kneading required, you can have freshly baked bagels in no time! The recipe uses simple ingredients: mozzarella cheese, cream cheese, almond flour, baking powder, and eggs. A sprinkle of Everything but the Bagel seasoning adds extra flavor, but these bagels are just as tasty without it.

    Ingredients

    You only need a handful of ingredients to make these delicious homemade bagels:

    • 1 and ½ cups almond flour
    • 1 tablespoon baking powder
    • 2 and ½ cups pre-shredded mozzarella cheese
    • 2 ounces cream cheese
    • 1 whole egg + 1 egg yolk (reserve egg white for egg wash)
    • Everything but the Bagel seasoning (optional)

    Many recipes call for multiple eggs, but I find that using one whole egg plus an extra yolk gives the best texture while keeping the dough easy to work with. If you prefer a less salty or garlicky flavor, you can skip the seasoning and use sesame seeds instead.

    Instructions

    Step 1. As always, preheat the oven (400 degrees F) and at the same time prepare a baking sheet with parchment paper lining.

    Step 2. Meanwhile, in a bowl, combine almond flour and baking powder. You may want to sift the flour mixture using a mesh but it's not required.

    Step 3. In a separate bowl, combine mozzarella and cream cheese. Melt the cheese mixture in the microwave for 1-2 minutes. Once melted, thoroughly blend them together using a spatula.

    Step 4. Add in the flour mixture to the melted cheeses. Add the eggs. Continue combining and folding them altogether until it forms to an even dough.

    The dough can be very sticky at this point, you have to oil your hands to make the next step easier.

    Step 5. Divide the dough into 6. Take one slice of dough and roll it into a small log. Connect both ends to form a bagel. Place it into the prepared baking sheet. Repeat the process for the rest of the 5 slices of dough. Make sure to make spaces in between each bagel.

    (Optional) Step 6. Brush the bagels with the reserved egg whites. Top all of them with everything but the bagel seasoning.

    Egg wash helps the bagels achieve a golden brown color.

    Everything but the bagel seasoning has salt and garlic to it so you may want to ease up on this because the dough is quite salty itself already because of the mozzarella in the dough.

    You can either choose to top the bagels before or after baking.

    Step 7. Bake for 15 minutes. Let it set and cool before serving.

    Substitutions

    • Cottage Cheese Instead of Mozzarella & Cream Cheese – Use 2 cups small curd cottage cheese in place of mozzarella and cream cheese. Drain excess moisture before mixing. Add an extra ¼ to ⅓ cup almond flour to compensate for the additional moisture. The texture will be slightly softer but still delicious.
    • Different Flour – While almond flour is best for this recipe, you can try sunflower seed flour for a nut-free option.
    • Dairy-Free Alternative – Swap out the mozzarella and cream cheese for dairy-free shredded cheese and plant-based cream cheese substitute.
    • Topping Variations – Instead of Everything but the Bagel seasoning, try sesame seeds, poppy seeds, or coarse salt.

    Storage and Reheating

    How to Store:

    Let the bagels cool completely before storing them. Keep them in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week.

    How to Freeze:

    Wrap each bagel individually in plastic wrap and store them in a freezer-safe bag. They will keep in the freezer for up to 3 months. Thaw at room temperature or in the refrigerator before reheating.

    How to Reheat:

    • Oven: Preheat to 350°F (175°C) and warm the bagels for 5-7 minutes.
    • Toaster: Slice and toast for a crispier texture.
    • Microwave: Heat for 15-20 seconds, but this may make them softer rather than crispy.

    Helpful Tips

    • Preheat your oven properly to ensure even baking.
    • Oil your hands when shaping the dough to prevent sticking.
    • Check your baking powder’s freshness. Expired baking powder can cause the bagels to spread too much.
    • Adjust seasoning to taste. Everything but the Bagel seasoning adds salt and garlic, so use it sparingly if needed.

    • Divide the dough into six equal portions. Roll each piece into a small log, then connect the ends to form a bagel shape. Place them on the prepared baking sheet, leaving space between each one.
    • Brush the bagels with the reserved egg white for a golden finish. Sprinkle with Everything but the Bagel seasoning or sesame seeds if desired. If you prefer a milder taste, you can add toppings after baking instead.

    Notes

    • Oil your hands when forming the dough because it can be very sticky
    • Everything but the bagel seasoning is optional, you may choose not to top your bagels with it.
    • Make sure your baking powder is not out of date. This will cause your bagels to spread.

      I made the everything, cinnamon sugar (using stevia) and added 1 tsp of raw, organic honey to the dough and chocolate chip using Lilly's chips both the cinnamon and the chocolate chip were also fabulous and only .5 net carbs more.
