It's time to uncover the charms of anchovy in a dish. Pair it with a powerhouse ingredient that is garlic, expect a sucker punch taste in any fish recipe.
What is Anchovy?
Anchovies are small, saltwater forage oily fish. They are customarily gutted and brined in salt then preserved in oil. Anchovies are good when mixed with sauces because of its distinct flavor.
In my home country the Philippines, they are called dilis and being sold dried. We normally use them as stock or broth to vegetable stews and soups.
Ingredients

- Salmon. I love wild-caught salmon, that's what I used in this recipe. Any kind of salmon will do though for as long as the skin is on.
- Anchovy fillets. Not the paste or the dried ones. They are usually packed in oil and is very salty. You can get a 2 ounces can from your local grocery store but I got mine from trader Joe's.
- Unsalted butter. With anchovy in the recipe, salted butter is not recommended.
- Garlic. Minced garlic is what needed here. Garlic when used properly gives a sweet flavor to every dish. Do not over do though as it will overpower the flavor.
- Pepper. Freshly cracked pepper to bump the flavor.
- Lemon to cut the acidity
- Parsley. Either fresh or dried to sprinkle when ready to serve.
- Some optional ingredients. The original recipe calls for capers and salt. But I did not have capers so I left it off. Anchovy is salty already so I did not add anymore salt to the recipe.
I recommend using cast-iron skillet (affiliate link) to help the salmon skin sizzle to crispy perfection.

It only takes 10 minutes to sear and roast.
- Since you are going to use the oven, you need to preheat it at 400 degrees Fahrenheit firsthand.
- In a bowl, mashed together the softened butter, minced anchovy, minced garlic and ground pepper.
- In a cast-iron skillet over HIGH heat, sear or lightly fry the salmon skin down for 2-3 minutes until brown using half of the anchovy garlic butter mixture. Make sure to spoon some of the melted butter from the pan over the fish as it cooks.
- Transfer pan to oven and roast for 5-6 minutes.
- Remove pan from oven and put remaining butter mixture into the pan until it melts.
- Serve immediately with the buttery sauce over the fish. Squeeze some lemon juice and sprinkle with parsley.
